IMI Winery is a wine project in the Palatinate with a flagship store in Cologne, whose idea is to combine the terroir of the Palatinate soil with the terroir of the streets of Cologne. By not using industrial yeasts, fining, filtration and minimal sulfite additions, they try to produce wines that are as pristine and natural as possible.
