Alexander Herrmann is one of Germany's most famous chefs. Not least because of his appearances on "Kitchen Impossible" and his show "Aufgegabelt". In his two-star restaurant "AURA" in Wirsberg, Franconia, he pursues a very special philosophy: over 80 farmers from the region supply the future laboratory "ANIMA", where the products are first refined before they are delivered to the restaurant kitchen and processed there. This concept is the basis of his book AURA & ANIMA, which he wrote together with his cooking partner Tobias Bätz.
In an interview with YouDinner founder Miguel Calero, he explains how it is possible to work with high-quality regional products even when they are out of season. Incidentally, the most photographed object in the "AURA" is a large work of mirror art by artist Mateusz von Motz: "Fuck normal, I want magic" - a passionate commitment to a unique cuisine.
