Everyone knows it, everyone has one in their hood and pretty much everyone of us has already managed to get through the first hunger pangs of the morning there: the Hofpfisterei. Our trusted neighborhood baker has now combined two really good things for the start of spring: Natural sourdough bread and edamame. The Pfister Organic Edamame Sun has been available in all stores since April 15, 2021.

Hofpfisterei is as much a part of Munich as its many traditional pubs. You can be sure that sooner or later you'll find yourself in front of one of the branches when strolling through a neighborhood. Incidentally, this feeling has been reassuring Munich locals for much longer than you may know. The Hofpfisterei was first mentioned in a document in 1331 and has now been run by the Stocker family for three generations. The visible threat to our planet prompted the Hofpfisterei to take a comprehensive ecological approach in 1985.

The Pfister organic edamame sun: natural sourdough meets soybean

One reason why we like the Hofpfisterei so much: Not only can you always rely on the fact that all baked goods are made with organically produced ingredients, the Hofpfisterei is also always surprising us with new creations.

For a fresh start to spring 2021, the team has now gotten particularly creative. They have used the Japanese soybean edamame in their natural sourdough bread. In Japan, edamame is traditionally served with beer. And the green bean with sea salt is also a popular starter in this country. So why not make a bread creation with it? Pfister Organic Edamame Sun consists of 23% edamame beans from German/European Naturland cultivation, rye and wheat flour as well as soybean meal, water, sunflower seeds and sea salt. The result is a moist, mild farmhouse bread that is a real plant-based source of protein. Perfect for topping up your energy reserves on the go and for any meal at home.

Recipe idea from Hofpfisterei: Spring bread with green asparagus and Asian herb pesto

Serves 2:
150 g green asparagus, salt

Clean and wash the asparagus, cut diagonally into pieces approx. 3 cm long. Cook the asparagus pieces in boiling salted water for 3-4 minutes. Drain in a sieve, rinse in cold water and pat dry with kitchen paper.

1 handful each of Thai basil, mint and coriander leaves, 1 slice of ginger (approx. 1 cm), 1 clove of garlic, 2 tbsp vegetable oil, 5 tbsp chopped pistachios, 3 tbsp ground almonds, 2 tbsp freshly squeezed lime juice, 2 tbsp soy sauce, 2 tbsp vegetable stock.

Wash and dry the herb leaves. Peel the ginger and garlic.
Finely puree the herbs, ginger and garlic with the oil, 3 tbsp pistachios, almonds, lime juice, soy sauce and vegetable stock, season with salt.

2 slices of Pfister Organic Edamame Sun, 2 handfuls of rocket leaves (cleaned, washed and dried), coriander leaves to sprinkle (to taste)

Spread half of the Asian herb pesto on the slices of bread.
Arrange the rocket leaves and asparagus on top, drizzle with the remaining pesto and serve sprinkled with the remaining pistachios and coriander leaves.
