Kombucha und Gemüse Workshop

Fermentation is one of the oldest and most wonderful ways to transform food: simple ingredients give rise to vibrant flavors, subtle acidity, depth, and a longer shelf life.
In this workshop, you’ll dive into two fermentation processes: You’ll learn how kombucha is made—and how to easily lacto-ferment vegetables. We’ll taste St. Ferment Kombucha, discuss cultures, microbes, hygiene, and flavor, and together we’ll start our own vegetable ferment, which you’ll take home with you.
The workshop takes place in a small group at our BrauAtelier in Freiburg-Wiehre—in person, in a relaxed atmosphere, and with plenty of time for questions.
Here’s what to expect
You’ll receive a clear introduction to the basics of fermentation and learn what’s important when fermenting at home. We’ll show you how kombucha is made from tea, sugar, and active cultures, and why time, temperature, and hygiene are crucial.
In the hands-on portion, we’ll ferment vegetables together in a jar. You’ll learn how brine works, which vegetables are suitable, which spices add interesting flavors, and how to continue your fermentation at home.
Of course, there will be tastings too: You’ll sample St. Ferment Kombucha and get a feel for its acidity, sweetness, maturity, and vibrant flavors.
