In the east as in the west—varenyky are known and prepared throughout Ukraine and beyond its borders. Like almost no other dish, these dumplings epitomize Ukrainian home cooking; they’re celebrated in folk songs, featured in movies, and enjoyed by millions every day. Their fillings vary depending on the region, season, and personal taste, but they’re usually vegetarian and traditionally served with sour cream.
