Cooking and collecting wild herbs

Herb hike followed by a cooking course in Blankenfelde (Pankow)

This course combines two perspectives on wild plants: safe identification in the landscape and their practical processing in the kitchen. In Blankenfelde (Pankow), participants will experience a combined wild herb cooking course that begins with a guided herb hike and ends with a jointly prepared menu.

Under expert guidance, you will explore the surroundings of the Blankenfelde estate and adjacent areas of the Tegeler Fliess nature reserve. You will be introduced to edible wild herbs and - depending on the season - berries. You will learn how to safely identify these plants, what ingredients they contain, how they can be used for culinary purposes and what the potential risks are. Among other things, possible mix-ups, soil contamination, roadsides and health aspects such as parasites are discussed.

Following the collection phase, the tour moves on to the kitchen of the Stadtgut, which has retained its historical character but is also equipped with modern facilities. Together with an experienced wild herb chef, the collected plants are prepared into a multi-course menu. The recipes are deliberately kept suitable for everyday use: refined, but without elaborate special ingredients, with regional and organic components.

The course emphasizes practical relevance and sustainable knowledge transfer. Drinks, small snacks and the complete menu are included in the course. After completing the course, all participants will receive an overview of the plant species found as well as all the recipes as a PDF by email so that they can continue what they have learned on their own.
