Do you think plant-based and therefore sustainable cuisine tastes boring or always the same? Then you need more umami in the kitchen! Umami is our 5th taste, alongside salty, sweet, sour and bitter - but for many it is the most difficult to grasp. Yet we are all very familiar with this hearty, savory taste and it's usually the secret to when things taste particularly good! Vegan, sustainable, seasonal food can also be as hearty, tasty and hearty as classic pub cuisine.
This umami cooking course starts with the theoretical basics - what is umami at a molecular level, how is it created and how can we tease it out when cooking? We will also train our senses in a practical way with a variety of tastings and cook a 3-course meal together, which we will enjoy together afterwards.
