In the basic fermentation workshop, you will learn how to ferment vegetables. You will be taught all the basic knowledge and techniques to make your own ferments at home, whether sauerkraut, pickled cucumbers, kimchi or salted lemons. At the end, you will take home a jar of the vegetables you have made.
Duration of the workshop: approx. 3.5 hours
Number of participants: 4-8
We will provide a jar, vegetables, spices, herbs, etc.

Fermentation in general is the creation of conditions under which microorganisms transform a food in a desired way. Sauerkraut, yoghurt, cheese, miso, soy sauce, chocolate, black tea, coffee, wine, beer, bread - many of our foods are fermented.
Fermenting vegetables is a very old technique for preserving food without refrigeration. The potential of fermentation lies not only in the health aspects but also in the special flavors that are created during fermentation. No special equipment is required, just good vegetables, salt and an airtight container.
Julius is a visual artist and fermentation expert. He has been giving regular workshops on fermentation, cooking and wild herbs since 2022.
