In the basic fermentation workshop, you will learn how to ferment vegetables. You will be taught all the basic knowledge and techniques to make your own ferments at home, whether sauerkraut, pickled cucumbers, kimchi or salted lemons. At the end you will take home a jar of your home-made creation.

Number of participants: 4-8
Please bring a jar with a capacity of 0.5 - 1.0 liters. Alternatively, you can get a jar on site for 5€.
Vegetables, spices, herbs etc. will be provided by us.
There will also be a small snack. Please let us know in advance if you follow a vegan diet or have any allergies or intolerances.
Fermentation in general is the creation of conditions under which microorganisms transform a food in a desired way. Sauerkraut, yoghurt, cheese, miso, soy sauce, chocolate, black tea, coffee, wine, beer, bread - many of our foods are fermented.
Fermenting vegetables is a very old technique for preserving food without refrigeration. Both the health benefits and the special flavors that result have led to a fermentation revival in recent years. Virtually no special equipment is required, just good vegetables, salt and an airtight container, preferably a glass jar.
Julius is a visual artist and fermentation expert. He has been giving regular workshops on fermentation, cooking and wild herbs since 2022.
