Op dä Desch de Altkölsche Köch—the ultimate cooking show!
with Thomas Coenen and Kalle Köckeritz

Author Thomas Coenen and restaurateur Kalle Köckeritz discuss the unique aspects of a culinary history spanning nearly two thousand years and demonstrate how these traditions are brought to life in modern restaurant kitchens live on stage. Some of the dishes will be prepared right before the audience’s eyes and then served as a three-course tasting menu. The restaurant’s in-house smokehouse—unique in Cologne’s culinary scene—is also frequently put to use. Producer Richard Bargel reads excerpts from historical sources and provides background music during the serving and tasting process.
The menu:
Appetizer: Feldmösch with Korvhirring, served with Appelrohm and Öllich
Main course: Lamb stew in milk with green bean purée
Dessert: Bavarian apple compote
The appetizer consists of a baked potato with matjes herring fillet, onion rings, and apple cream. The main course is a roast lamb that has been marinated in milk beforehand, served with green beans and mashed potatoes. To finish, an apple cake—a batter cake with stewed apples and chestnuts, topped with crumble.
