Author Thomas Coenen and restaurateur Kalle Köckeritz discuss the unique aspects of a culinary history spanning nearly two thousand years and demonstrate how these traditions are brought to life in modern restaurant kitchens live on stage. Some of the dishes will be prepared right before the audience’s eyes and then served as a three-course tasting menu. The restaurant’s in-house smokehouse—unique in Cologne’s culinary scene—is also frequently put to use. Producer Richard Bargel will read excerpts from historical sources and provide background music during the serving and tasting.
